TOO MANY COOKS SPELL SUCCESS AT NEW BRISBANE BAR & GRILL
Brisbane has a new Bar & Grill restaurant set to make its mark with rustic home grown cooking and one of the city’s finest wine lists.
Cook & Co., located on street level of the Mantra on Queen Hotel at the southern end of Queen Street, offers an eclectic menu showcasing locally sourced produce from land and sea.
Using an array of cooking techniques with a significant spotlight on the char grill, highlights include the slow braised spiced beef brisket with coriander and cumin yoghurt from the ‘Starters’ menu;the Spanish seafood broth with chorizo and citrus served in a hearty saucepan from the ‘Pots & Pans’ list; and the Corned & Char Grilled 7+ mbs Wagyu Silverside and the Southern style beef short ribs off the ‘From the Grill’ selection.
Helmed by Restaurant Manager, Dallas Bickle - who hails from Brisbane’s hospitality dynasty which operates some of the city’s most well-known venues including Cloudland and Press Club – Cook & Co is taking hotel restaurant dining to a new level.
Formerly Food & Beverage Manager at Brisbane’s New Inchcolm Hotel & Suites and The Langham Melbourne, Bickle says:
“There is a real market for traditional grill style food done well and the key is sourcing the best produce available and treating it with respect in deserves in the kitchen. Add a great wine list and craft beers, service that glides through a sequence and you have the recipe for Cook & Co.” says Bickle.
“The dining experience here can range from a simple meal over lunch, three course dinner through to our “Planked Banquets” for groups of 10 or more. The flexibility caters perfectly to the local clientele as much as it does our hotel guests.”
Bickle’s favourites from the wine and beer selections include Yarra Yering No. 2 or a Red Hill 10th Anniversary Red Ale.
Executive Chef Andrew McCabe started his career at the age of 15. Having worked throughout Europe in five star hotels and restaurants he returned to Australia when taking over Spoon New Farm. Prior to joining Cook & Co he was running the kitchen for The Hideout, Tipplers Tap and Brewhouse.
The restaurant surroundings adopt a modern bistro décor with a relaxed atmosphere incorporating communal tables and private booths, while exposed wooden beams and brick work create an urban industrial character.
Also open for breakfast, Cook & Co serves classics such as bubble & squeak, eggs served any way, smashed avocado on sour dough and bruschetta with cherry tomatoes and anchovies.
TheCook & Co. ‘grab and go’ café fronting onto Ann Street is open from 7:00am-2:00pm Monday to Friday for coffee and breakfast snacks catering to morning commuters and local office workers.
After work drinks can also be enjoyed with an extensive bar menufeaturing tasting boards for one or more, pizzas made to order and a clever twist on hotel classics.

Lunch: Mon - Sat 1100 – 1500
Dinner: Mon – Sat 1700 – 2200
