New duo to deliver for Mantra at Stone Restaurant and Bar Brisbane
No stone went unturned to track down the perfect new duo to head Stone Restaurant and Bar at Mantra South Bank Brisbane – new Head Chef Carlen Uphill and new Restaurant Manager Brendon Smith.
“Both of them have fabulous accolades and achievements to their name, including winning multiple awards,” said Mantra South Bank’s General Manager Leah Feldman.
“They are sure to reinvigorate the excellent dining experience on offer at Stone Restaurant and Bar with all of their experience and flair.”
Carlen Uphill was most recently Head Chef for Peasant in The Barracks (winner of Savour Awards in 2011 and 2012 and Restaurant & Catering Award in 2012 under Uphill’s leadership), opened Gordita in Fortitude Valley and has been Head Chef of a team of 43 chefs for Daydream Island Resort and Spa - all of which are award-winning and highly popular restaurants and hotels.
Brendon Smith has headed up some of the best cocktail bars in New Zealand and has won numerous world cocktail competitions and beer competitions, as well contributing to a number of magazines and books including The Bartender’s Bible; Bartender Magazine; and Drinks Designer for The Press newspaper in Christchurch.
He has also worked in a variety of well-known Brisbane, Sydney, Auckland and Christchurch establishments, including Dux De Lux, an iconic Christchurch venue unfortunately lost to the 2011 earthquake, and brings a multitude of high-level skills to the restaurant floor with expertise in everything from systems implementation and leadership skills to staff dynamics.
With Stone Restaurant and Bar known for its contemporary atmosphere and menu, the new duo will continue to deliver an innovative dining experience with a strong emphasis on fresh, seasonal produce.
